MY STORY

Since my very first job with the Public Health agency in Houston (city of Houston), my mission has been to help others with “what they already know but don’t know how to use” – at the level they are most comfortable with. That mission continues and has been the approach during my entire career. Whether with a regulatory (government) position or within a large restaurant chain, I have always believed in being humble to instill the best food safety and sanitation principles. The authoritarian style may work for a little but will eventually catch up with everyone. I have never wanted to be a food safety “cop.”

With a government position, comes political agendas and caveats but with the “education first” mentality, I was extremely successful in a progressive career advancement and remember many of the regulated operator’s comments – “don’t ask Chirag for any favors, because you won’t get any. He would rather explain to you how to get your place in better compliance than turning the other way.

After a very successful implementation of technology at the city, the CEO of a technology provider company reached out and told me – “Chirag, I need someone like you to come work with us and make the company grow – not only because you know your food safety stuff, you know how to use it efficiently.

While with the prominent US restaurant company, my manager often introduced me as the “rainman of the food code,” but my favorite descriptor was “Chirag is the person who speaks Health Departmanese.” I speak regulatory language and I know what it means for the operators. I was able to change the resentment and push from the OPS team (very typical) into a great collaborative environment. When an internal 3rd party audit program was introduced, it wasn’t very popular and we had a challenging failure rate. Within 2 years, we were able to move the needle in the right direction and were able to reduce the failure rate by 30%+.

I have an expansive background of experience from working with regulatory agencies, private companies, both small and large, to public companies with 1,700 restaurant locations. I’ve been one of many team members, have added recent work experience in top-notch distribution company and recently worked with a widely-popular mega convenience store chain that is ranked top in many categories at national level – but my goal is still the same.
