After spending over 26 years with the City of Houston’s Food Safety Program, I joined the team at Digital Health Department (Garrison Enterprises, Inc.) as the VP of Environmental Health Services & Client Consulting. My goals were to serve the Environmental Health community by setting standards and creating technical solutions to food safety inspections and other environmental health-related issues. While with the technology provider, I assisted in creating new clients, and once they were ready to join the technology wave, helped the public and private sectors with consulting and implementing technology for their daily tasks.

Prior to that, at Houston’s Health Department, I was Program Manager for over 15 years before leaving the regulatory agency. Positions held included: field inspector, instructor in the food manager’s certification program, supervisor of the specialized food inspection section. As the Program Manager, I managed a staff of 70 employees, and served as a board member of the Houston Restaurant Association for 15 years.

After Garrison Enterprises, I joined Bloomin’ Brands (home of Outback, Carrabba’s, Bonefish Grill and Fleming’s) and managed regulatory compliance and affairs (food safety) for over 1,700 restaurants in the US and abroad. Worked with the OPS, R&D and Supply Chain teams to ensure that all restaurants were following proper food safety and sanitation guidelines to become the best in class.

I spent a few months at Sysco Corporation as the Director of Regulatory and Technical Services. In addition, I have worked with Legal firms as a subject matter expert (SME), wholesale distribution and processing firms, chain restaurants and individually-operated restaurants as a SME and food safety consultant.

Recently, I was at Buc-ee’s as Director of Food Safety and QA. My role with the mega convenience store chain involved retail store and branded-item supplier’s food safety and QA. I was instrumental in setting retail store SOPs and private-branded item supplier SOPs.

I have been actively involved with the Conference for Food Protection (CFP) for almost 2 decades. I have been a committee member, council member, and Council Chair. I am a board member with Food Safety Summit’s Education Advisory Board and an advisory council member with Sani Professional. I have served as the chair for National Restaurant Association’s QA executive study group for three terms.

I live in Houston, TX and have been here since 1980.
